2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 jalapeno, chopped
10ml smoked paprika
500g beef mince
400g tin chopped tomatoes
⅓ cup coriander, roughly chopped, plus extra to serve
100g mozzarella
4 eggs
1 jalapeno or long green chilli, thinly sliced, to serve
Heat the oil in a large pan (with a lid) over medium-high heat. Add onion, garlic and jalapeno and cook, stirring, for 3–4 minutes until soft. Add the smoked paprika and stir through. Add the beef and cook, stirring, for 5 minutes or until browned.
