Cauliflower, bacon & cheese pasta bake

SERVES 4

INGREDIENTS

300g short pasta
500g frozen cauliflower florets
4 rashers bacon, chopped
30g butter, chopped
2 Tbsp plain flour
2 cups milk
1½ cups mozzarella,
coarsely grated
⅔ cup parmesan,
finely grated
¼ cup panko breadcrumbs
⅓ cup fresh flat-leaf parsley,
for serving

1 Preheat grill. Oil a 2-litre ovenproof dish.

2 Cook pasta in a large saucepan of boiling water until al dente. Add cauliflower to pan during the last few minutes. Drain.
