LEFTOVER PORRIDGE PANCAKES
PREP 10 MINS COOK 20 MINS SERVES 4 (AS A BREAKFAST)
150g cold leftover porridge
150g (1 cup) self-raising flour
2 tsp baking powder
1 ripe banana, mashed
2 x 60g eggs
100ml skim milk
400g mixed berries, to serve
4 Tbsp reduced-fat Greek natural yoghurt, to serve
2 tsp honey, to serve
1 Combine the porridge, flour, baking powder, banana, eggs and milk in a bowl.
Spray a large non-stick frying pan with cooking spray. Heat over medium heat. Drop 2-3 tablespoons of the porridge mixture into the pan. Cook for 2-3 minutes or until the underside is golden and bubbles are popping on the
