200g pkt dried pad Thai rice noodles2 bunches broccolini, stems and florets separated 1 carrot, peeled, thinly sliced diagonally500g chicken breast fillets, trimmed, thinly sliced2 tsps pepper steak seasoning2 tblsps vegetable oil1 medium red capsicum, cut into strips4 green spring onions, cut into 4cm lengths¼ cup hoisin sauce2 tblsps soy1 tblsp lime juiceRoasted unsalted cashews, to serve
