Fanciful terms like mousseline, dacquoise, and gelee are casually tossed around to describe this prime example of fine French patisserie, but it needn’t be daunting for the everyday home baker. It’s merely a matter of stacking up airy vanilla cakes with fresh berries and fluffy mousse in the middle, finished by a mirror-like glaze of ruby red strawberry gel.

For the Vanilla Sponge Cake:
