A blazing beach bonfire is the stuff summer memories are made of, but if you’re less than confident in your live-fire finesse or blocked by a bonfire ban, it’s time to roll out the good old-fashioned Smokey Joe. Here are a few helpful hints for getting a fire-licked lunch or dinner all up on your grill.

Grill on the go. If you’re reluctant to rely on an unfamiliar summer holiday rental’s barbecue, or just prefer to pack your own heat, invest in a portable propane or charcoal grill. Propane pros are undeniable; small, lightweight fuel canisters eliminate the need to lug around messy charcoal, and the lighting process is pretty much foolproof. But there are, of course, those who argue that propane misses the whole point. Card-carrying member of the charcoal club? Fair enough – there is definitely something alluring about a smoke-kissed steak.
