CRUSTLESS QUICHE
SERVES 6
This quiche is so simple to make and doesn’t require many ingredients, yet it always seems to take centre stage. And rightly so: it’s a luxurious, flavoursome mouthful. With a green salad on the side you have a perfect starter dish if you’re entertaining guests, or it can be the main attraction at a light summer lunch. Enjoy!
• 4 jumbo eggs
• salt and pepper to taste
• 500 ml (2 cups) fresh cream
• 400 g mature white Cheddar cheese, grated
• 180 ml (¾ cup) chopped chives
• freshly ground black pepper to taste
• chilli powder to taste
1. Preheat the oven to 180°C.
2. In a large bowl, whisk together the eggs, salt, pepper and fresh cream.
Layer half the Cheddar cheese at the bottom of a greased 20 cm pie dish and scatter over half the chives. Pour in the egg mixture. Top with the remaining cheese
