Cheesy stuffed chicken with cranberry
PREP + COOK TIME 30 MINS SERVES 4
4 x 150g chicken breast fillets
90g brie cheese, thinly sliced
300g baby spinach leaves
⅓ cup (100g) cranberry sauce
1 Cut a 2cm slit in the thick end of each of the chicken breast fillets. Carefully push the knife through the middle of the fillet to make a pocket, without cutting all the way through.
