BEST-EVER BEETROOT VEGIE BURGER

“There are so many vegie burger patties available these days, which is a good thing. Naturally, if you want to make your own you can, but I think some are so good that they’re worth having on hand for quick meals. The most important thing to do when it comes to premade patties is to check the ingredients list and look for whole foods such as pulses, lentils, vegetables and herbs. Avoid the highly processed ones full of soy protein and fillers.”

SERVES 2

1 tbs extra-virgin olive oil
1 small onion, finely sliced
Sea salt and freshly ground black pepper
2 vegie burgers of your choice
2 wholemeal bread rolls
½ nicely ripe avocado
2 tbs beetroot hummus
½ cup (25g) baby spinach leaves
4-6 slices tinned, drained beetroot
½ carrot, coarsely grated
