Pakora bean burgers with raita and sweet potato chips
A classic bean burger meets a spicy Indian fritter, which will aid digestion and is packed with antioxidants.
Serves 2 • Ready in 35 mins
½ red onion, finely sliced
150g coarsely grated carrot
2 large sweet potatoes
½tbsp extra virgin olive oil (optional)
1 garlic clove, finely chopped
1½tbsp curry paste of the heat you prefer, plus more to taste
1 x 400g can black-eyed beans, drained and rinsed
3tbsp chickpea (‘gram’) flour, plus extra for tweaking
small handful of fresh coriander, finely chopped
1 lemon+
for the raita:
¼ cucumber
4tbsp plain soya yogurt
4 fresh mint leaves, finely chopped
1tsp black onion seeds (optional)
