Apricot lattice pies

MAKES 4 PREP AND COOK TIME 30 MINUTES

410g can apricot halves in juice
½ cup (160g) apricot jam
1 teaspoon ground ginger
½ cup (70g) macadamias, roasted, chopped finely
1 sheet frozen shortcrust pastry, thawed
1 sheet frozen butter puff pastry, thawed
1 egg, beaten lightly vanilla ice-cream, to serve

1 Drain apricots; place on a tray lined with paper towel, pat dry with more paper towel. Combine jam, ginger and macadamias in a small bowl.
