SERVES 2
✣ 2tbsp extra-virgin olive oil
✣ 120g (4oz) onion (about 1 small), finely chopped
✣ 120g (4oz) carrot (about 1 large), finely chopped
✣ 3 garlic cloves, grated
✣ 200g (7oz) peeled and deseeded butternut squash, cut into 1cm (½in) cubes

✣ 6 fresh sage leaves
✣ 60g (2oz) cooked and peeled chestnuts, crumbled
✣ 1 vegetable stock cube
✣ Sea salt and freshly ground black pepper
✣ 400g tin butter beans, drained and rinsed
✣ 160g (5½oz) savoy cabbage (about 1 head), leaves separated and torn
