SERVES 4

2 aubergines, cubed

200g (7oz) cherry
tomatoes

Sunflower oil cooking
spray

130g (4½oz) basmati rice

200g (7oz) red split lentils

1 onion, finely chopped

3cm (1¼in) piece root
ginger, grated

2 garlic cloves, crushed

1tsp ground turmeric

2tsp garam masala

2tsp cumin seeds

1tsp black mustard seeds

1.25ltr (2pt) vegetable stock

200g (7oz) spinach leaves,
chopped, plus extra
to serve

Juice of 1 lemon, plus
wedges, to serve

Low-fat natural yogurt
and thinly sliced
