SALMON KEDGEREE

Salmon’s energy-boosting effects are related to the way it activates our metabolism. It is delicious when stirred through this vibrant kedgeree.

SERVES 6

300g (10oz) basmati rice
1tbsp vegetable oil
1 large onion, chopped
½tsp ground turmeric
2tbsp biryani paste
2 crushed garlic cloves
750ml (1¼ pints) hot vegetable stock
4 large eggs
125g (4oz) hot smoked salmon
15g (½oz) fresh coriander, roughly chopped
125g (4oz) cooked peas

1 Put the rice in a bowl and, with a clean hand, stir the rice under cold running water for 1 min until the water
