SALMON KEDGEREE
Salmon’s energy-boosting effects are related to the way it activates our metabolism. It is delicious when stirred through this vibrant kedgeree.
SERVES 6
✣ 300g (10oz) basmati rice
✣ 1tbsp vegetable oil
✣ 1 large onion, chopped
✣ ½tsp ground turmeric
✣ 2tbsp biryani paste
✣ 2 crushed garlic cloves
✣ 750ml (1¼ pints) hot vegetable stock
✣ 4 large eggs
✣ 125g (4oz) hot smoked salmon
✣ 15g (½oz) fresh coriander, roughly chopped
✣ 125g (4oz) cooked peas
