CAULIFLOWER AND CHICKPEA CURRY

A warming curry is just the ticket on a chilly Autumn evening, and this one’s packed with some everyday superheroes to boot!

SERVES 4

2tbsp sunflower oil

1 onion, sliced

1tbsp curry powder

1tsp turmeric

400ml can coconut milk

400ml vegetable stock

1 head of cauliflower, trimmed

400g can chickpeas, rinsed
