Not strictly British, obviously, but one of the nation’s favourite dinners, so I had to include it.
SERVES 6 PREP 10 MINS COOK 1 HOUR 15 MINS
✱ 1tbsp olive oil
✱ 1 large onion, diced
✱ 1 medium carrot, peeled and diced
✱ 1 celery stick, diced
✱ 3 garlic cloves, crushed
✱ 1tbsp balsamic vinegar
✱ 1tsp yeast extract or miso paste
✱ 200g chestnut mushrooms, sliced
