Sweet chilli prawns with bacon
Something light and fishy is the perfect way to whet appetites for the indulgent feast that follows!
SERVES: 6
PREP TIME: 5 MINS
COOK TIME: 5 MINS
• 4 rashers streaky bacon
• 1 lemon, zest and juice
• 4tbsp sweet chilli sauce
• 500g cooked and peeled king prawns
• 200g bag baby leaf spinach, washed
• 2 ripe but firm avocados, stoned, peeled and sliced
1 Chop the bacon and dry-fry in a pan until crispy, then set aside.
2 Pour the lemon juice into a large bowl, mix in the sweet chilli sauce and stir in prawns to coat well.
