Christmas pudding
The ultimate prepare-ahead pudding, and the longer it matures, the better it tastes.
SERVES 8
PREP TIME: 20 MINS
COOK TIME: 4½ HRS
• 375ml mulled wine
• 1kg dried vine fruits
• 200g halved glacé cherries
• 250g dark muscovado sugar
• 4 beaten eggs
• 60g plain flour
• 1tsp of baking powder
• 1tbsp ground mixed spice
• 150g breadcrumbs
• 200g vegetarian suet
• 4tbsp brandy
• You will need:
• 1.25ltr pudding basin, well greased
• Baking parchment and foil
1 Pour the mulled wine overthe dried fruits and leave to soak overnight, or up to 3 days.
