Christmas pudding

The ultimate prepare-ahead pudding, and the longer it matures, the better it tastes.

SERVES 8

PREP TIME: 20 MINS

COOK TIME: 4½ HRS

• 375ml mulled wine
1kg dried vine fruits
200g halved glacé cherries
250g dark muscovado sugar
4 beaten eggs
60g plain flour
1tsp of baking powder
1tbsp ground mixed spice
150g breadcrumbs
200g vegetarian suet
4tbsp brandy
You will need:
1.25ltr pudding basin, well greased
Baking parchment and foil

1 Pour the mulled wine overthe dried fruits and leave to soak overnight, or up to 3 days.

Add the glacé cherries, darkmuscovado sugar and mix well. Add the eggs and stir until smooth. Sieve in the flour, baking powder and mixed spice, followed by the breadcrumbs, suet, and brandy and
