One-pot lamb and chickpea couscous
Serves 4
Dean loves this one as the couscous absorbs all the incredible flavours from within the pot rather than being just a boring side to accompany the meal.
You will need
✽ 1–2tbsp olive oil
✽ 300g lamb shoulder, cubed
✽ 1 onion, finely diced
✽ 2 garlic cloves, crushed
✽ 3 fresh thyme sprigs
✽ 1tsp smoked paprika
✽ 1tsp ground cumin
✽ 400g can of tomatoes
✽ 400g can of chickpeas, drained and rinsed
✽ 500ml boiling chicken stock
✽ 200g couscous
✽ Salt and pepper
