No-fuss dinners

One-pot lamb and chickpea couscous

Serves 4

Dean loves this one as the couscous absorbs all the incredible flavours from within the pot rather than being just a boring side to accompany the meal.

You will need

1–2tbsp olive oil
300g lamb shoulder, cubed
1 onion, finely diced
2 garlic cloves, crushed
3 fresh thyme sprigs
1tsp smoked paprika
1tsp ground cumin
400g can of tomatoes
400g can of chickpeas, drained and rinsed
500ml boiling chicken stock
200g couscous
Salt and pepper

To serve:
