A FLAVOUR OF SOUTHEAST ASIA
Big red peanut noodles

YOU WILL NEED
✔ 1 large aubergine ✔ pinch of salt ✔ ¼ red cabbage ✔ handful of fresh coriander, roughly chopped ✔ handful of fresh mint leaves, roughly chopped ✔ 50g roasted and salted peanuts ✔ 1 lime, halved ✔ 1 red chilli (optional) ✔ 100g flat rice noodles ✔ 1 tbsp vegetable oil or sesame oil ✔ 1 garlic clove ✔ thumb-sized piece of fresh ginger
For the sauce ✔ 1 lime ✔ 2 tbsp smooth peanut butter ✔ 2 tbsp soy sauce ✔ 1 tbsp sweet chilli sauce ✔ 1 tbsp water
DIRECTIONS
■ Chop the aubergine into 1.5cm cubes and add to a hot frying pan with a pinch of salt. Dry fry for 5-7 minutes, tossing regularly, until they’re charred and collapsing. Finely slice the red cabbage, chop the peanuts and slice the chilli, if using, and set aside.
■ Put the noodles in a bowl and cover them with boiling water. Leave them to soak according to the packet instructions until they’re tender. Drain and rinse the noodles under cold water, then set aside.
