BAKING WITH APPLES

MAKES 4 SMALL OR 1 LARGE
For the dough
200g (7oz) plain flour
2 tsp baking powder
115g (4oz) butter, chilled and diced
3 tbsp plain yoghurt
butter, for greasing
icing sugar mixed with cinnamon, to taste, for dusting
For the filling
2 large apples, peeled and coarsely grated
2 tbsp lemon juice
2 tbsp brown sugar
cinnamon and ginger, to taste
1 tsp honey
120g (4oz) ground almonds
1 Sift the flour and baking powder into a large bowl, add the diced butter and rub it in with your fingers until the mixture resembles coarse crumbs. Gently stir in the yoghurt, mixing until the dough just begins to come together. Cover and place in the fridge to chill for 30 minutes.
