APPLE AND SAUSAGE DRESSING
Makes 8 to 10 servings
1 (8-ounce) package ground mild pork sausage
5 tablespoons unsalted butter
2½ cups chopped leeks (white and light green parts only)
2 cups chopped celery
2 Fuji apples, cored and diced
½ cup chopped pecans
2 tablespoons finely chopped fresh sage
¼ teaspoon ground black pepper
10 cups 1-inch-cubed day-old cornbread
3 cups chicken broth
2 large eggs, lightly beaten
