Plum & hazelnut pandowdy

A pandowdy is made with a sweet dough baked on top of fruit, the crust being ‘dowdied’ by pushing it into the fruity juices before serving.

SERVES 6

900g plums
125g light soft brown sugar
1\2 teaspoon ground cinnamon finely grated zest and freshly squeezed juice of
1 small orange
40g unsalted butter, chilled and cubed chilled cream, to serve

FOR THE PANDOWDY CRUST

250g plain flour3 tablespoons caster sugar1 tablespoon baking powder100g unsalted butter, chilled and cubed75g finely ground hazelnutsabout 200ml single creamcaster sugar, for dusting a cast-iron frying pan, skillet or heavy baking
