Strawberry, lime & elderflower surprise pudding

‘This all-time classic has been given a contemporary makeover’

A lemon surprise pudding is absolutely delicious; what more could you want other than a light, soufflé-like sponge atop some citrussy curds? I’ve given this all-time classic a slightly contemporary makeover with a strawberry, lime and elderflower version.

Serves 4

70g soft unsalted butter, plus extra for greasing
250g strawberries, hulled and halved
zest and juice of 2 limes
175g caster sugar
50ml elderflower cordial
250ml milk
3 eggs
50g plain flour double cream, to serve

you will need:

deep, lidded pot (roughly around
25cm wide and 11cm high)

1 Preheat the oven to 200C/Gas 6. Grease the base and halfway up the sides of your deep pot with butter.

2 Arrange the strawberry halves in the pot and then sit the pot in a large roasting tin. Boil a kettle ready for later.

3 Zest both the limes and add the zest to a medium-sized bowl, along with the sugar and butter. Squeeze the limes into a measuring jug (this should amount to about 50ml) and add the elderflower cordial and the milk. Don’t worry if this starts to curdle.
