MOROCCAN BEEF PILAF

SERVES 4-6 PREP AND COOK: 25 MINS

450g packet microwave basmati rice
500g beef mince
2 tblsps Moroccan seasoning
1 large onion, thinly sliced
200g green beans, trimmed, halved
1 medium zucchini, trimmed, thinly sliced
1 cup beef stock
1 tsp ground turmeric
400g can chickpeas, drained, rinsed
Lemon wedges, to serve

1 Heat microwave rice according to the packet directions.

2 Meanwhile, heat an oiled, large, deep, non-stick frying pan over a medium to high heat. Add the beef and Moroccan seasoning. Cook, stirring to break-up mince, for 4 minutes.

3 Add the onion to mince in pan and cook, stirring occasionally, for about 4 minutes, or until onion is soft. Add the green beans and zucchini. Cook, stirring, for a further 2 minutes.
