QUICK BEEF AND MUSHROOM PASTA

SERVES 4 PREP AND COOK: 20 MINS

375g small pasta curls
500g lean beef mince 1 red capsicum, finely chopped
200g punnet sliced button mushrooms
785g jar tomato, onion and garlic pasta sauce 2 cups grated light Tasty cheese
½ cup chopped fresh parsley

1 Cook pasta in a large stockpot of boiling, salted water until tender. Drain, reserving ½ cup of the cooking water. Return pasta to stockpot and cover to keep warm.

2 Meanwhile, heat an oiled, large frying pan over a high heat. Add beef and cook, stirring with a wooden spoon to break up mince, for about 5 minutes, or until browned. Add capsicum and mushrooms, stirring for about 2 minutes, or until capsicum is tender.

Add pasta sauce and reserved cooking water.
