berry apple pies

800g can apple slices pie fruit
185g fresh or frozen raspberries
55g (¼ cup) caster sugar
¼ tsp ground cinnamon
6 sheets frozen shortcrust pastry, just thawed (see tip)
Icing sugar, to dust
Vanilla ice-cream, to serve
1 Combine the apple slices, raspberries, caster sugar and cinnamon in a bowl.
2 Use pie maker pastry cutters to cut 12 large and 12 small discs from pastry. Use a small decorative cutter to cut out a shape in the centre of the small pastry discs.
3 Lightly grease the pie maker holes. Press a large pastry disc into each prepared hole. Place 1/3 cupful of the mixture in each pastry case. Place a small pastry disc on top of each.
4 Turn on the pie maker and close the lid. Cook for 8-10 minutes or until the pastry is golden brown and the filling is cooked through. Turn off the pie maker.
5 Lift out the pies and transfer to a wire rack. Let the pie maker cool slightly then repeat with the remaining pastry and mixture in 2 more batches.
6 Dust the pies with icing sugar and serve warm with ice-cream.
top tip
Use good-quality sweet homemade shortcrust pastry, or sweet shortcrust pastry bought from specialty food stores, to take these pies to the next level.
