BOLOGNESE SAUCE

Adding the ingredients in stages takes a bit of time, but it provides noticeably deeper flavor in the end.

Bolognese [boh-loh-N’YEH-zeh] sauce is prepared like a stew for exceptional depth of flavor.

Makes 10 servings (about 10 cups) Total time: 1¾ hours

MINCE:

1 cup each chopped yellow onions, carrots, celery, and fennel bulb
10 cloves garlic, smashed
2 Tbsp. olive oil
1 Tbsp. kosher salt

STIR IN:

12 oz.8 oz. ground pork3 Tbsp. Italian seasoning1 tsp. black pepper
