MANDARIN CUPS

MAKES 6-8 CUPS PREPARATION : 15 MIN COOKING: 25-30 MIN
80g butter
400ml sugar
2 extra-large eggs
500ml (2c) cake flour
5ml (1t) bicarbonate of soda
10ml (2t) baking powder
500ml (2c) milk
juice of 2 mandarins
5ml (1t) vanilla essence
45ml (3T) marmalade jam
SAUCE
150g butter
300ml cream
80ml ( c) sugar
zest of 2 mandarins
TO SERVE
ice cream or custard
Preheat the oven to 180°C. Grease 6-8 enamel cups with nonstick spray.
