PEANUT BUTTER CRUMPETS
MAKES 12-15
PREPARATION: 15 MIN
COOKING: 2 MIN EACH
500ml (2c) flour
10ml (2t) baking powder
5ml (1t) salt
1 egg 310ml (1¼c) milk
60ml (¼c) peanut butter
TOPPING
250ml (1c) icing sugar
60ml (¼c) peanut butter
extra peanuts
1 Sift the dry ingredients together in a large bowl.
2 Whisk the egg, milk and peanut butter together and slowly whisk into the dry ingredients, making sure the batter is free of lumps. Leave the mixture to rest for 15 minutes.
Heat a non-stick pan and spoon tablespoonfuls of batter into the pan. When
