Use your noodles
1 ROMESCO NOODLES WITH STEAK STRIPS AND BABY TOMATOES
SERVES 4 PREPARATION: 20 MIN COOKING: 35 MIN
ROMESCO SAUCE
1 large red pepper, halved and seeded
2 garlic cloves, bruised
60ml (¼c) toasted sunflower seeds
handful of fresh parsley
30-45ml (2-3T) olive oil
5ml (1t) smoked paprika
pinch of cayenne pepper
juice and grated zest of 1 lemon
salt and freshly ground pepper
STEAK
300g sirloin steak
5ml (1t) smoked paprika
salt and freshly ground pepper
5ml (1t) olive oil
NOODLES
3 packets (75g each) egg or instant noodles
15ml (1T) olive oil
300g mixed baby tomatoes extra chopped parsley
Preheat the oven to 200°C. Grease a baking sheet with nonstick spray.
1 Romesco sauce Put the pepper halves on the baking sheet, skin-side facing upwards and arrange the garlic cloves in between. Roast for 20 minutes or until the pepper’s skin is charred.
2 Transfer the pepper halves and garlic to a plate and cover with clingfilm. Leave to cool slightly, then remove the clingfilm and pull the pepper’s skin off. Press the garlic from the cloves.
