Cooking perfect pasta
Bring a large saucepan of water to a rolling boil, add 2 or 3 teaspoons of salt, then the pasta. To prevent pasta sticking, don’t be tempted to add oil to the water – as it will prevent the sauce from adhering to the cooked pasta. Instead, immediately stir the pasta for a few minutes. Dried pasta takes from 8-11 minutes to cook depending on the shape; use the packet instructions as a guide. However, always set your timer slightly earlier than the time given and scoop out a piece to test. It should be what the Italians call al dente – that is, firm to the bite. Fresh pasta will cook in 1-2 minutes.
