Romesco sauce with eggplant & zucchini

Serves 4 Prep + cook: 35 mins

Ingredients

 Olive oil spray
 2 eggplant, sliced on the diagonal
 4 zucchini, sliced thinly lengthways
 ⅓ cup blanched almonds, roasted, chopped coarsely
 ⅓ cup skinless roasted hazelnuts, chopped coarsely
 ¼ cup fresh flat-leaf parsley
