Romesco sauce with eggplant & zucchini
Serves 4 Prep + cook: 35 mins
Ingredients
• Olive oil spray
• 2 eggplant, sliced on the diagonal
• 4 zucchini, sliced thinly lengthways
• ⅓ cup blanched almonds, roasted, chopped coarsely
• ⅓ cup skinless roasted hazelnuts, chopped coarsely
• ¼ cup fresh flat-leaf parsley
