IT DOESN’T have to be complicated. These recipes are for quantities you’d normally buy – one cucumber, one cabbage or cauliflower, a bag of carrots or a punnet of tomatoes. If you want to keep it on the shelf, you need to sterilise the jars but if you’re just keeping it in the fridge, that’s not necessary.
BASIC PICKLE
MAKES 500ml (2c) PREPARATION: 5 MIN COOKING: 5-10 MIN
375ml (1½c) apple cider vinegar250ml (1c) water160-180ml (/3-¾c) sugar5ml (1t) salt2,5ml (1t) coarsely ground pepper5ml (1t) turmeric (optional)
