One-dish CHICKEN BAKE
SERVES 4-6 / PREPARATION: 10 MINS / COOKING: 1 HOUR
CHICKEN
6-8 chicken portions (thighs and drumsticks)
salt and freshly ground pepper
60ml (¼c) tomato sauce
30ml (2T) chutney
15ml (1T) Worcestershire sauce
15ml (1T) light brown sugar
15ml (1T) white wine vinegar or brown vinegar
TO FINISH
1 red onion, cut into wedges and lobes separated
4 garlic cloves, bruised
1 can (410g) whole cherry tomatoes
250ml (1c) chicken stock
5ml (1t) light brown sugar
5ml (1t) mixed dried herbs
freshly ground pepper
TO SERVE
handful fresh parsley, chopped
Preheat the oven to 180°C. Keep a deep ovenproof dish and a sheet of aluminium foil handy.
1 Chicken Season the chicken with the salt and pepper and arrange in a dish.
2 Mix the rest of the ingredients well, then pour over the chicken and rub in.
3 To finish Put the onion wedges and garlic in the ovenproof dish. Add the tomatoes.
4 Mix the stock with the sugar and herbs and season with the pepper. Pour the mixture over the ingredients in the ovenproof dish and mix lightly.
Arrange the chicken in a single layer in the ovenproof dish.
