PERFECT CHICKEN LIVER PÂTÉ
MAKES 375ml (1½c) PÂTÉ PREPARATION: 10 MIN COOKING: 20 MIN
15ml (1T) oil
200g bacon rashers, chopped
250g chicken livers, rinsed
15ml (1T) brandy
60ml (¼c) milk
15ml (1T) dried mixed Italian herbs handful of fresh parsley, chopped
grated zest of 1 lemon
salt and freshly ground pepper
60ml (¼c) butter, melted
fresh parsley sprigs
TO SERVE
toasted ciabatta slices
1 Heat the oil in a large pan and fry the bacon until done but not crisp. Add the livers and stir-fry until just done but still a little pink in the middle.
