HARISSA FRIKKADEL PASTA
SERVES 4-6 PREPARATION: 15 MIN COOKING: 40-45 MIN
500g wholewheat pasta of choice
FRIKKADELS
350g pork sausages, mince removed from casings
2 garlic cloves, finely chopped
1 chilli, finely chopped
5cm fresh ginger, grated
4 spring onions, chopped
handful fresh coriander, chopped
HARISSA SAUCE
15ml (1T) olive oil
1 onion, chopped
2 chillies, chopped (optional)
2 garlic cloves, chopped
15ml (1T) harissa paste
1 can (410g) whole tomatoes
15ml (1T) smoked or regular paprika
5ml (1t) ground cumin
5ml (1t) ground coriander
finely grated zest of 1 lemon
15ml (1T) lemon juice
5ml (1t) sugar
salt and freshly ground pepper
TO SERVE
fresh herbs
