ROAST CHICKEN WITH HERBY CREAM CHEESE
SERVES 4 READY IN 2 HR 25 MIN
180g cream cheese
3 tbsp chopped herbs, such as chives, parsley and basil
Zest of 1 lemon
1 medium whole chicken, approximately 1,5kg
Olive oil
2 packs radishes, large ones halved
1 pack mixed baby carrots, peeled and the tops trimmed
1 pack baby potatoes
Knob of salted butter
6 sprigs lemon thyme (or plain thyme), leaves stripped
