DATE AND CARROT CAKE INGREDIENTS
• 360g Dates, chopped
• 360ml Orange Juice
• 1 Teaspoon Bicarb soda
• 300g Brown Sugar
• 600g Self Raising Flour
• 2 Teaspoon Mixed Spice
• 6 Eggs
• 4 Cups Coarsley Grated Carrot
• 2 Cup Coarsley Grated Zucchini

• 20cm Round Cake

This recipe is a 97% fat free, date and carrot cake and will make a 20cm round cake that will be big enough to split into 2 layers, filled with frosting and be ready to cover with fondant as one of the layers of the wedding cake.

STEP 1
Prepare your cake tin by lining with baking paper. Pre-heat oven to 180 °C.
