HIDDEN CASHEW TRUFFLES

PREP TIME: 45 MINS (+ CHILLING)

COOK TIME: 10 MINS

SERVES 20 (2 TRUFFLES EACH;

AS A DESSERT)

125ml (½ cup) light thickened cream
125g good-quality dark cooking chocolate, chopped
1 Tbsp pure maple syrup
125g (¾ cup) unsalted raw cashews

1 Put the cream in a small saucepan and heat over medium until just comes to the boil. Remove the pan from the heat and add the chocolate. Stir until the chocolate melts. Stir in the maple syrup. Transfer to a bowl. Cover and put in the fridge for about 2 hours or until firm.

2 Meanwhile, preheat oven to 170°C (fan-forced). Spread the cashews over a baking tray. Bake for 8-10 minutes, stirring until once, or until golden. Set aside 40 whole cashews. Put the remaining cashews in a small food processor. Cover and pulse until nuts are finely chopped. Transfer to small bowl and set aside.
