moroccan mint cocktail

This was inspired by my travels to Morocco, where drinking mint tea is a daily custom. Mint is easy to grow and available year-round in many parts of Africa.
5 cups (lightly packed) mint leaves
juice of 4 lemons or limes
8 tbsp honey (or sweetener of choice) crushed ice
1L soda or sparkling water mint leaves, for garnishing
Juice or blend the mint leaves (if blending, sieve to yield the juice). Blend together the mint juice, lemon or lime juice and honey to make a concentrate. Scoop ¼ cup ice into each cocktail
