SERVES 12 PREP AND COOK TIME 1 HOUR 30 MINUTES

180g butter, softened
1½ teaspoons vanilla bean paste
2⅔ cups (585g) caster sugar
3 eggs
¾ cup (165g) self-raising flour
¼ cup (35g) plain flour
½ cup (125ml) milk
6 egg whites
¾ teaspoon cream of tartar
1½ tablespoons flaked almonds
1½ teaspoons caster sugar, extra
2 medium (860g) mangoes
