LIGHTER THAN AIR

BERRY & COCONUT CHIA PUDDINGS

PREP TIME 15 mins + chilling SERVES 6

 2½ cups coconut milk
 ⅓ cup white chia seeds
 1 teaspoon vanilla extract
 2 tablespoons honey or pure maple syrup
 1 medium banana, coarsely chopped
 1 tablespoon finely grated orange zest
 3 cups mixed berries

1 Place coconut milk, seeds, extract and honey or pure maple syrup in a large bowl; cover, refrigerate for 1 hour or overnight until thick.

2 Blend or process coconut milk mixture with banana, zest and 2 cups of the fruit. Spoon into six ¾-cup serving glasses; refrigerate for 30 minutes or until pudding has thickened. Top with remaining fruit to serve.
