RED VELVET WHOOPIE PIES WITH COCONUT ORANGE FILLING

 75g dairy-free spread, plus extra for greasing
 ⅓ cup caster sugar, plus 1 tablespoon extra
 1 egg
 ¾ cup gluten-free self-raising flour
 1 tablespoon baby rice cereal
 1 tablespoon cocoa powder
 ¼ cup soy milk
 1 teaspoon red food colouring
 ½ cup chilled coconut cream (not milk), drained of water
 1 teaspoon finely grated orange zest
 1 tablespoon gluten-free icing sugar (pure icing sugar)

1 Preheat oven to 150°C. Grease two 12-hole (1 tablespoon) shallow round-based patty pans with dairy-free spread.

Beat butter and sugar in a medium bowl with an electric mixer until combined.
