PRAWN & HALLOUMI KEBABS

PREP + COOK TIME 20 mins MAKES 6

 90g halloumi cheese
 18 small uncooked prawns, shelled, deveined
 2 teaspoons dried oregano
 2 tablespoons olive oil
 6 bay leaves, halved
 pepper, to season
 lemon cheeks and crusty bread, to serve (optional)

1 Cut the halloumi cheese into 12 bite-sized pieces. Combine cheese, prawns, oregano and oil in a bowl.

2 Thread the prawns, bay leaves and cheese alternately onto 6 small skewers; season with pepper.

3 Cook skewers on a heated grill pan or barbecue over medium-high heat for 5 minutes or until prawns are cooked through. Serve with lemon cheeks and bread, if desired.
