CHERRY & PISTACHIO TABBOULEH

PREP + COOK TIME 30 mins + standing SERVES 8

 1½ cups bulghur wheat
 2 cups boiling water
 500g cherries, pitted, halved
 1 cup pistachios, coarsely chopped
 2 cups mint leaves, finely chopped, plus ½ cup, extra
 1 cup flat-leaf parsley leaves, finely chopped, plus ½ cup, extra
 1 red onion, finely chopped
 salt and black pepper

RED WINE VINEGAR DRESSING

 ½ cup olive oil
 ⅓ cup red wine vinegar

1 Combine bulghur wheat and the water in a heatproof bowl. Stand for about 15 minutes or until bulghur wheat is tender and the water absorbed.

2 Make Red wine vinegar dressing (see below).

3 Add cherries, nuts, chopped herbs and onion to bulghur wheat. Stir in Red wine vinegar dressing; season to taste.

4 Serve sprinkled with the extra herbs.

Red wine vinegar dressing

Whisk ingredients in small bowl; season to taste.

 30g piece fresh ginger
 2 cups water
 ¼ cup brown sugar
