FIERY FRIED PRAWNS WITH TOMATOES
SERVES 4 AS A MEAL OR 6 AS A SIDE DISH PREPARATION: 10 MIN COOKING: 25-30 MIN
30ml (2T) olive oil
2 onions, chopped
4 garlic cloves, chopped
5cm fresh ginger, grated
2 red chillies, chopped
1kg prawns, deveined
5ml (1t) tomato paste
250g cherry tomatoes
juice of 1 lime
15ml (1T) soy sauce
5ml (1t) brown sugar
handful of fresh coriander
1 Heat the oil in a deep pan or saucepan and brown the onions. Add the garlic, ginger and chillies and stir-fry until fragrant.
