Elsa’s Kitchen

She may be married to ‘Thor’, but Elsa Pataky is no sidekick. She’s an actress, mother of three and all-round superwoman slaying the wellness space. Hailed for her balanced approach to healthy living, her new book Strong is no exception. It’s packed with body-fuelling recipes that will not only fill your plate and pantry but also help you cultivate a positive relationship with food. As she told us when she starred on our cover last year, “I hate extremes in everything ... you have to find what your body craves and what is good for it.” On that note, we’ll have what she’s having.

Creamy porridge WITH SALTED DATES, ALMONDS AND ROSEMARY

SERVES 2–4

100g rolled oats
750ml almond milk, rice milk or water
Sea salt flakes
4 dates, halved and pitted
A few drops of extra virgin olive oil
2 tsp rosemary leaves, finely chopped
115g honey
2 tbs full-fat Greek yoghurt
80g chopped almonds

1. Preheat the oven to 180°C.

2. Place the oats in a saucepan along with the milk or water and a pinch of salt. Bring to the boil, stirring constantly with a wooden spoon to make sure the bottom doesn’t burn. Reduce the heat and simmer for 5–7 mins until the porridge starts to become thick and creamy.

3. Meanwhile, place the dates on a baking tray and toss with the oil, rosemary and a pinch of salt. Bake for 6 mins. Remove from the oven and keep warm.

Once the porridge reaches your desired consistency, stir in half the honey and spoon into serving bowls.
