Lemon and herb peri-peri roast turkey

Rev up your roast with a sprinkling of spice

SERVES 12

2 red onions, cut into wedges
2 lemons, cut into wedges Few sprigs each of thyme, sage and bay leaves
5.4kg (12lb) free-range turkey 30g (1oz) Nando’s Lemon & Herb PERi-PERi Rub
75g (2½ oz) butter

1 Tuck the onion, lemon and some of the herbs into the turkey cavity. Line a roasting tin with 2 pieces of foil. Sit the turkey on top, sprinkle over the peri-peri rub, dot with butter and wrap tightly with foil. Weigh the stuffed turkey and calculate the roasting time: 15 min, plus an extra 15 min for each 450g.
