Every one’s a winner

Add some weeknight magic to your line-up without reinventing the wheel. With a few easy tweaks, basic pasta dishes like puttanesca and family favourites such as risotto can be given the x-factor with staples you’ve probably got handy in your fridge or cupboard. And with dinners this simple, you’ll even have time for dessert!

Eggplant puttanesca

Ready in 30 minutes | Serves 4

100ml olive oil
1 eggplant, peeled and cut into 1 cm dice
Salt flakes
4 anchovy fillets, finely chopped
2 cloves garlic, finely chopped
¼ tsp chilli flakes, or to taste
400g tin whole peeled tomatoes, crushed
60g pitted black olives, halved
1 Tbsp baby capers in brine, drained
500g rigatoni (or any pasta shape of your choice)
1 small handful finely grated parmesan or pecorino, plus extra to serve
